Germany's most famous Christmas market is the one in Nuremberg. It's touristy but very atmospheric.
The markets are kinda all the same, so while I visited a different one each day in Vienna last winter, I didn't plan the entire trip around them.
6 days is a long time in Munich. Make a trip to Salzburg - daytrip or stay a night or two.
Also, add Bamberg to your itinerary. It's 40 mins by train north of Nuremberg. It's arguably the most beautiful city in all of Germany.
You have enough time that you should think about going to Dresden. It has a great Christmas market as well as lots of great museums - which you'll appreciate in that kind of weather.
Frankfurt is really not worth any of your time, and even as a base for exploring nearby areas, I'd rather be in Mainz. But really those wine regions are much, much nicer to explore in warm weather.
