Several years ago I had a similar issue with my cell phone service:
My monthly data use on my phone is far far under the 1GB plan limit. One month the usage jumped up close to the limit. I started switching the phone to airplane mode overnight. After several months, I was looking through System Settings and found a new option. (I had updated iOS a few months earlier.) The new option was "allow background refresh." Because it was a new option, Apple defaulted it to on! The problem is that any time I used Safari, I would end by going to a website that would have been considered very simple in the 1990's. Unfortunately, that site would push out page updates every few minutes. With background refresh, Safari would keep updating even when the phone seemed to be sleeping. Hence a massive data usage.
So, regarding your problem: Make sure there isn't an app on some device that is streaming a video in the background.
