A) Should and can are two different things. The official way to test/cup coffee is via Chemex.
B) Espresso lets you taste the roast level. But, not necessary all of the possible notes in the coffee beans. It emphasized the chocolate side of the coffee bean. And, it is harder for you to taste the fruity side. But, if that is what you like, it is no loss to you.

That would best express the nuances of a bean. But for espresso alone one can very obvious taste the difference between dark vs light roast, as they are complete opposite of the taste spectrum, and also evident in the dial-in process. The fruit-forward light roast espresso style has been the dominant style with the so-called 3rd wave coffee and the Nordic style which has been in fashion for 2 decades.
And, for a home roaster like me with 10+ varieties of green coffee beans at home, that is the most important thing to me. Or else, why bother roasting different kinds of coffee bean if you cannot taste the difference.
As for others do not change their coffee bean type every day, it may not matter at all. Once that they get what they liked, they may not try anything else.
