My experience has been that Zelle can use email when supported directly through the financial institution. When enrolling in Zelle I am usually prompted to select email or the phone number. I've fairly recently signed up all of these with email only:

Superior ChoiceCredit Union
Pelican State Credit Union
Bank of America
Laurel Road
Credit Union of New Jersey
Affinity Credit Union
My CU is StarOne, and they require both e-mail and phone number for Zelle. That is stated in their Zelle enrollment instructions.

I also have BofA. Curious how you got it to work with just email. I couldn't find detailed Zelle enrollment instructions. There are videos I didn't want to watch. I could not get it to work yesterday. Will be calling them later today.
