Absinthe is only needed for a rinse for a few cocktails, although I've been using the same bottle of Pernod for almost 10 years. Fernet Branca and Amaro Nonino are niche ingredients. I have both and only use them in 1 or 2 drinks each. My home bar is over 60 bottles and I don't own an Old Tom gin.Pacifique Absinthe: $80

I use Absinthe regularly in Sazeracs, Fernet in Hanky Panky, Amaro Nino in Black Manhattan, and Old Tom in a Martinez.
All part of my regular cocktail rotation, making at least once a month.
