Question: is there a way to safely provide automatic transfer switch power to only a portion of the house, eg. only select fuse panels to exclude all the pool/spa/steam/sauna equipment? Has anyone done this?
Yes, but you'll probably need to do a very significant amount of rewiring to separate your critical loads into their own subpanels. It may be very involved if the subpanels are very far from the main. You may have to open a lot of walls, or run electrical conduit on the outside.
It's a lot simpler to size your generator for all your loads. 100 kW sounds like a lot, though. We have a home with many of the same features, plus two EVs, with 200amp service. I'm assuming your panel is 400amps. Our peak load almost never exceeds 20 kW, and that's usually when both cars are charging at once. Our heating and water heating is natural gas though. 400amps is 96 kW, but your peak is probably nowhere close to that. I use a Rainforest Eagle3 with Home Assistant to measure and record the electrical data in real-time.
